<p><strong>Bazo&#8217;s Fresh Mexican Grill</strong> can&#8217;t open its doors soon enough. Literally.</p>
<p>&#8220;Even though we&#8217;re not officially open, we&#8217;re still selling food,&#8221; said Bazo&#8217;s co-owner <strong>Nira Paresh, </strong>who was busy organizing the new location four days before the official opening<strong>.</strong> &#8220;People couldn&#8217;t wait to come back, so we just opened our doors a little early.&#8221;</p>
<p>The soft opening is evident. Menus are noticeably absent from the walls, and opened boxes waiting to be discarded lay in a pile off to the side. Regardless, people are flocking to the new location at 4014 Dutchmans Lane.</p>
<p>&#8220;We&#8217;ve never advertised or sent out coupons, we rely only on word of mouth. It&#8217;s a strategy that&#8217;s worked well for us.&#8221;  Bazo&#8217;s officially opens on Monday, July 7.</p>
<p>Bazo&#8217;s closed its Wallace Ave. location after five years because Paresh thought she needed more visibility.</p>
<p>&#8220;The lease ended on our old place, which made it convenient for us,&#8221; Paresh said. &#8220;It just wasn&#8217;t very visible, being tucked away in that corner.&#8221;</p>
<p>Paresh believes the new centrally located store will attract more business. &#8220;Even though we have less square footage, we&#8217;re now in a newer, cleaner building, and we&#8217;re more visible from the road. It gives us more potential customers.&#8221;</p>
<p>Bazo&#8217;s main draw is its fish taco, which is the among the best you&#8217;ll find this side of San Diego. Two soft corn tortillas surround a generous filet of fried white fish, topped with a handful of crunchy cabbage. Other taco varieties are available as well, including shrimp, chicken, steak and shredded beef. Or, try one of the burritos, which are as big and delicious as any in town.</p>
<p>The move into new quarters is just the beginning for the local restaurant, which is considering expansion in the future.</p>
<p>&#8220;We&#8217;d like to eventually add four or five more locations in Kentucky,&#8221; said Paresh. &#8220;We don&#8217;t have a timetable, but it&#8217;s something that&#8217;s on our minds.&#8221;</p>
